Our story
Meet Carter & Kayden
The owners of Coco's Coffee Co.
Kayden and I are high school sweethearts from Northern California. We moved to Oregon separately for school, and that’s where I first tried to turn my dream of opening a coffee shop into a reality.
Eventually, we made our way to Salt Lake City because we wanted to experience living in a city and try taking the dream somewhere new. I was offered a job managing a restaurant, where I got a much more hands-on look at the behind-the-scenes side of running a business, while Kayden became an airline pilot.
But Coco’s actually started long before all of that. Coco’s has been a dream of mine since high school. I worked at a coffee shop with my brother, Sam, and we had the best time working together. We would always joke about opening a coffee shop of our own someday.
In 2020, Sam passed away, and our family’s world completely flipped upside down. It took time for all of us to find our footing again. When I was 19, I decided I was going to start building the coffee shop I had been dreaming about. I needed something to put my mind to.
And I mean building it. From the ground up.
No, it absolutely does not take five years to open a coffee shop, haha. But life happened along the way. I tried to make the dream happen in Oregon and heard multiple — like, 100 — no’s while searching for a location and trying to be taken seriously. Eventually, I decided it was time to pivot.
Throughout all of it, coffee has been a little part of our life together. We’ve always loved coffee dates, trying new places, and figuring out how to make our favorite drinks. Over the years, my love for coffee turned into a full-blown hobby — learning the science behind it, how to make a really great drink, and how to create something people genuinely want to come back to.
We had always dreamed about living somewhere warm and close to the beach, so when the opportunity came, St. Pete felt like the perfect place to start a new chapter and finally bring Coco’s to life.
Getting here hasn’t been easy. There have been plenty of reasons to give up: the no’s, losing thousands of dollars to a contractor who didn’t finish what we paid for, building a business while working through grief, and all the other bumps in the road.
But the dream never left. I knew we would make it happen, and I am so happy to get to this point.
And I truly would not have made it this far without Kayden, our families, and our friends. From answering endless plumbing questions to helping us build, encouraging us through the hard parts, and believing in this dream from across the country, our people have shown up for us in more ways than we could ever put into words. We are so incredibly grateful for our village.
After five years of dreaming, learning, moving three times, building, stressing, laughing, and probably drinking way too much coffee, Coco’s is finally here.
Our hope is simple: to create a fun, welcoming little space where you can grab your daily drink, become part of our routine, and hopefully leave with your day feeling just a little brighter.

Why the name
Coco’s Coffee Co.
The name actually started when I was little. For about two days, I decided I wanted everyone to call me Coco. Then I decided I wanted to be Carter again, but somehow the nickname stuck with my family till this day.
So when it came time to name the shop, Coco’s Coffee Co. just felt right.
There’s a little piece of Sam in it. His favorite coffee was cold brew with coconut creamer, so of course we’ve created a Coco’s version he would love. That connection inspired our little coconut mascot, a nod to his favorite drink. I know he’s looking down so proud of this little shop. 🤍

You should leave a little lighter than you arrived. If we did that, we did our job, coffee or not.

Coco’s is a walk-up coffee trailer in Tampa at 8718 North 40th Street. It’s small on purpose, close enough to learn your name, quick enough to fit into your morning, and warm enough that you’ll want to come back.
